If you’ve ever tried my sweet potato brownies then you’ll know there’s no need to sell this recipe to you. They are…simply put…just delicious. They are gluten free, sugar free and depending on the protein you use (I use Vega Clean Protein), they can be vegan or dairy free too. Once made they will last a few days in a tupperware box in the fridge (unless you have a human dustbin for a boyfriend like me then they last a few hours MAX!)
At first glance the ingredient list sounds exotic or hard to find but I have found all these ingredients stocked in Aldi at some point in time so are actually quite easy to get hold of nowadays.
Ingredients:
- 2 Cooked Sweet Potatoes
- 2 Tbsp Coconut Flour
- 1 Tbsp Coconut Oil
- 1 Scoop Vanilla Protein
- 2 Tbsp Stevia
- 1 Tbsp Ground Flaxseed
- 2 Tbsp Cacao Powder
- 1 Tsp Baking Powder
Recipe:
- Blend all ingredients together with the hot sweet potatoes.
- Spoon mix into bakung tray
- Cook on 200c for 20 mins or until you can runa knife through it and it come out clean.
- Enjoy with greek yogurt for an added protein boost or coconut yoghurt to keep them vegan and dairy free.
