This quinoa mac and cheese is as scrummy tasting as it looks!! The recipe is inspired by the recipe in Sarah Wilson’s I Quit Sugar book.
1 1/2 cup cooked quinoa
1/4 cup natural yoghurt (full fat as its lower in sugar)
1 cup cooked broccoli
1/2 a green pepper
1/3 cup of mozzarella/cheddar cheese (i used a pre grated pack)
1/2 cup of cheese for the topping
A handful of pumpkin seeds for topping (optional)
1 tsp paprika
Garlic salt and Chilli flakes to taste
Mix quinoa, yoghurt and vegetables into a saucepan.
Once the mixture is warm add the cheese and spices
Place in a dish, top with the extra cheese and pumpkin seeds and cook for 10 minutes on 200c or until cheese has turned a golden brown.
It really is that easy! I served mine with an avocado but you can also serve a smaller portion and use as a side dish.
