Quinoa & Goats Cheese Stuffed Mushrooms

These yummy mushrooms are a great vegetarian healthy lunch option that a clean and gluten free!!

Portobello mushrooms
Quinoa (i used a pre seasoned packet but you can use plain and add your own chopped peppers/onions/seasonings – whatever you fancy!!)
Goats cheese
Salt, Pepper Chilli flakes

Boil the quinoa (add veggies and seasonings here if necessary)
Clean the mushrooms and pick the stalks out
Place mushrooms upside down on a baking tray and season mushrooms with salt, pepper and chilli flakes.
Once quinoa is cooked spoon into the mushroom cups.
Sprinkle the goats cheese on top and bake at 180c for 15-20 minutes
