Serious about Snacking….

This baked egg recipe is perfect for breakfast, lunch or a large snack.


2 Eggs
Curly Kale
2 Bacon Medallions
Coconut Oil Spray
Your choice of bread/cracker to serve

Line a ramekin with coconut oil or your oil of choice.
Place the bacon round the edge of the ramekin.
Put the kale at the bottom of the ramekin.
Crack an egg on top of the kale.
Season with salt, pepper to taste. I season mine with sage.
Bake for 20/25 minutes on 200c
